Sabudaney ki Kheer (Sago Pudding)


SABUDANEY KI KHEER (SAGO PUDDING)

Recipe:
Ingredients:
  • 1 cup Sabudana (Sago)
  • 1 liter Milk
  • 1 cup Sugar1 tablespoon chopped Almonds
  • ½ tsp. Ilaichi powder (Green Cardamom Powder)

Method of Preparation:
  • Wash the Sabudana well in water. Drain it, but not completely. Let a little water remain in the Sabudana. Cover it and leave for 1-2 hours. The Sabudana (Sago) will swell up and get soft. Do not soak it in too much water, otherwise it will get mushy.
  • Boil the Milk.
  • Add Sabudana, Ilaichi Powder to the boiled Milk and heat the Milk on low flame for 10-15 minutes or till the Milk thickens. Stir regularly.
  • Add Sugar and mix it well. On low heat, stir regularly, for 5 minutes or till a thick consistency is obtained. 
  • Remove from Heat and transfer to a Serving Dish.
  • Garnish with sliced Almonds.
  • Refrigerate till Chilled.
Serve and Enjoy!

Pethey ka Halwa (Pumpkin Halwa)


Recipe: 

Ingredients:  
  • 2 cups grated Petha/ Kaddu (Pumpkin)
    For better flavor, use a Pumpkin which has a Reddish Orange Color
  • 2 tbsp. Pure Ghee
  • ½ cup powdered Sugar 
  • ½ tsp. Ilaichi Powder (Green Cardamom Powder)
  • 1 tbsp. chopped Almonds

Method of Preparation: 
  • Take a thick bottomed Pan. Add Ghee and heat the Pan on low flame.
  • Add the grated Petha and Powdered Sugar to the Pan. Mix these well.
  • Stir regularly and cook till the mix becomes very soft. 
  • Keep on mashing, till you get a smooth pulp.
  • Cook till it leaves the sides of the Pan.
  • Transfer to a Serving Dish.
  • Garnish with Ilaichi Powder and chopped Almonds.

Serve Hot and Enjoy!

Malai Laddoos

Malai Laddoos

Recipe:

Ingredients:
  • 100 gm. Condensed Milk
  • 250 gm. Paneer (Cottage Cheese)
  • 4-5 drops Yellow Food Color
  •  2-3 drops Keora Jal (Keora Water)
  • ½ tsp. Ilaichi Powder (Green Cardamom Powder)
Method of Preparation:
  • Mash Paneer.
  • Add mashed Paneer to the Pan.
  • Add Condensed Milk.
  • Mix well.
  • Place the Pan on low heat.
  • Stir continuously and cook on low heat till the mixture thickens.
  • Remove the Pan from heat.
  • Add the Food color and Keora Water to the mixture and mix well.
  • Pour the prepared Malai mixture on a Plate and allow it cool. (Not in a Refrigerator)
  • Prepare small round balls of Malai Laddoos.
  • Sprinkle Ilaichi Powder all on the Laddoos.
  • Malai Laddoos are now ready to Serve. 
Serve Fresh and Enjoy!

Paneer ki Rabri

Recipe:

Ingredients:  
  • 4 cups Full Cream Milk
    100 gm. Paneer (Cottage Cheese)
  • 3 tbsp. Singharey-ka-Atta
  • 8 tbsp. powdered Sugar
  • ½ tsp. Ilaichi Powder (Green Cardamom Powder)
  • 1 tsp. Keora Jal (Keora Water) 
  • ¼ cup chopped Nuts (Cashew Nuts, Pistachios)

Method of Preparation:

  • Mix Singharey-ka-Atta in 2 tbsp. Milk and keep it aside.
  • Heat Milk in a Pan, when it comes to a boil, switch to low heat.
  • Add the Singharey-ka-Atta and Milk mixture to the boiling Milk.
  • Stir regularly. Let the Milk thicken, till the quantity of Milk reduces to half.
  • Mash Paneer. Add the mashed Paneer to the Milk.
  • Add Sugar, Ilaichi Powder and Keora Jal.
  • Stir well. Cook till the mix thickens.
  • Transfer to a Serving Dish.
  • Refrigerate till Chilled (Do not Freeze).
  • Garnish with Nuts.
Serve Chilled and Enjoy !
